What is "Genshi-yaki"?

This is the most primitive way of grilling fish, which has been handed down since ancient times in Japan, in which the ingredients are skewered and placed around a charcoal fire.
The fish is crispy on the surface and fluffy on the inside.
It is one of the most delicious ways to grill fish.
